At Canyon Spice, we often receive requests from farmers seeking ways to utilize excess agricultural produce. In response to concerns about unused mizunasu eggplants, we set out to create a curry that would highlight their delicate texture while preserving their shape, even after slow cooking.

After extensive trials, we perfected the Osaka Senshu Mizunasu Eggplant Curry. The innovative process and commitment to excellence employed in its development quickly captured media attention, earning widespread acclaim. Today, it remains a beloved long-selling favorite with a devoted following.

We visited the head chef countless times, working together late into the night to perfect this curry.

The result is a luxurious curry made with domestic beef and vegetables, rich with the fragrant flavors of spices — a beloved, traditional taste. Both the packaging and its contents brings a nostalgic feeling.

The spirit of Kuidaore, which brought together Osaka’s vibrant food culture and became a legendary symbol of the city, lives on in this dish. The beloved figure of “Kuidaore Taro,” a clown character who once greeted customers at the Kuidaore restaurant in Dotonbori, continues to thrive as a symbol of this iconic establishment. Late into the night, alongside the head chef, we poured our passion into crafting this curry, infusing it with the nostalgic flavors of the past and the essence of Showa-era cuisine.
