This collaboration brings together Kikuchi Azuma, the master brewer at Kikuchi Sake Brewery Co., Ltd., which has been active in Kurashiki with an orchestra for nearly 50 years, and the acoustic vibration technology of Onkyo Corporation, a specialized manufacturer of sound. This Junmai Daiginjo sake, bearing the "Matured by ONKYO" designation, was brewed by directly applying the vibrations of Mozart's music to the mash tank.
This sake, named "Sanzen Kura Rhythm," is imbued with the "rhythm that resonates in the brewery" created by the yeast cultivated listening to musically-vibrated classical music and the heartbeats of the brewers who work hard to create the sake.
Made with Omachi rice, a specialty of Okayama Prefecture, polished to 50%, this sake is carefully brewed at low temperatures to create a perfect harmony of smooth flavor and refreshing aroma.

"Since our founding in 1946, as a manufacturer specializing in sound, we have designed audio products that incorporate sensory information into our technology, rather than relying solely on evaluations using measuring instruments. With the theme of "enhancing playback purity through physical accuracy, applying audio design that draws out musical expressiveness to food, and maximizing the potential of ingredients using the natural power of music," we are conducting research and clarifying the effects of musical vibrations on yeast in collaboration with Tokyo University of Agriculture. We are quantitatively analyzing the effects of vibration on yeast, aiming to further improve flavor and efficiency.
